Sunflower Seed Biscuits


I got to baking at the weekend…


These biscuits are quite savoury. I made them quite thick for dunking, but thinner is better with these because thicker means a little on the dry side!

What you need:

50g butter (dairy free alternatives available)
50g sunflower seeds
200g gram flour
200g rice flour
1 1/2 tsp baking powder
1/2 tsp xantham gum
1/2 tsp salt
3 tsp olive oil
200ml water

Step 1: Preheat the oven to 180 degrees and grease two baking trays.


Step 2: Mix up the flour, baking powder, xanthan gum, and salt in a mixing bowl. 


Step 3: Toast the sunflower seeds in a pan until they're brown. They smell really good! Pop them into the flour mix and mix it all up!

 

Step 4: Make a well in the centre and pour in the water and oil. Start mixing it in slowly and make a dough ball. This is the fun bit! 


Step 5: When you've played with the dough enough, roll it out on a smooth and dusted (with flour) surface. Mine aren't so thin, lack of a proper rolling pin at this point. Take a tumbler and start cutting circles in the dough.


Step 6: Lay them out on the two baking trays and pop them in the preheated oven for 30 minutes. 


Voila you get these biscuits! Great as a breakfast biscuit or a snack biscuit. As I said the thinner the biscuit the better the base. They're lovely with hummus, cream cheese, butter and cheese, or make them sweet with chocolate or toffee spread. 

Sunflower seeds are good sources of Vitamin E, magnesum, selenium, vitamin B1, maanganese, phosphorus, vitamin B6, folate, and niacin, so they're good for you. Add some flaxseed in there and you've a powerful source of fiber too!

Tip: Gram flour can be picked up in any Asian supermarket.
